Okay that’s not their official title. Their theme is the “Exploration of Chocolate”.
The Hungry Dudes were fortunate to experience a wonderful chocolate tasting menu in preparation for the Local Roots Dinner being held on February 11th at the Henry Ford.
We also had the opportunity to speak with the executive chefs who explained each dish, how it was prepared, and what challenges they faced while creating a mostly savory chocolate menu.
Bitter sweet Chocolate Bisque w/ Tabone Died Cherries
This delicious bisque lacked the sweetness one might expect from chocolate. A great balance of rich savory flavors from a tomato, garlic, and chocolate based bisque.
Chicken Mole with fried tortillas
The delectable chicken breast sits atop a perfectly blended mole with hints of chocolate accompanied by fried tortillas which offer a nice crunch to the dish.
White Chocolate & Black Walnut Crusted Whitefish with Chocolate Linguini & Calders Dairy Buerre Blanc (Calders Dairy -Carleton Michigan)
The white chocolate pieces are subtle while the nuttiness of Black Walnuts pair nicely with the delicate Whitefish. The Chocolate Linguini is again more savory than sweet and adds a nice richness to the crusted Whitefish. You don’t want to stop eating this Linguini until it’s all gone.
Cocoa Rubbed Braised Beef Short Ribs with Stout Demi
One of the stars on the menu, the Cocoa Rubbed Beef offers a depth of flavor to the tender pieces of Short Ribs with just the right amount of fat. The Stout Demi does not overpower the dish at all.
Braised Greens with Tabone Cherry Vinegar and Heirloom Carrots (Goetz Farms Greens, Riga Michigan)
These fresh veggies balance the decadences of the chocolate offerings. The Cherry Vinegar helps cut through the sweetness of the carrots offering a perfect amount of acidity.
Flourless Chocolate Torte
Who needs flour when your baking with the finest ingredients, in this case - Chocolate. Each bite is packed with pure chocolate goodness.
