#225 Mexican Pizza (by JoeFoodie)
Shredded rotisserie chicken seasoned with cumin and chili powder, black beans, mozzarella cheese inside 2 fresh cooked tortillas. Topped with homemade salsa & more cheese.  Baked in a 400 degree oven.  Slices of fresh jalapenos finish it off.
Great way to use leftover chicken. The jalapenos add intense spiciness and freshness.

#224 Chicken and Spinach Penne (by JoeFoodie)
Shred some rotisserie chicken, warm in a pan with EVOO add garlic, diced fresh tomatoes, and baby spinach.  Add cooked penne and cook until spinach is wilted.
I topped mine with fresh cayenne peppers.
An easy and delicious dinner.  Lots of flavor and freshness.  The tomatoes from the garden really make this dish.

#223 Beef Pasty (by JoeFoodie)
An upper peninsula staple,  this one was purchased in Sterling Heights.  Beef, cabbage, potatoes, carrots, and spices are all stuffed inside a delicate, flaky crust.  Served with gravy on the side. This is a full meal in a pocket.  Hearty, savory, and comforting.

#222 Affumiciata “Smoky” (by JoeFoodie)
Speck (smoked prosciutto), roasted garlic, mozzarella, smoked gouda, and ricotta.
Supremely savory pizza.  The combination of flavors is inspired.  Smoky speck marries perfectly with roasted garlic.  The 3 cheese mixture is divine as well.
From Supino Pizzeria in Detroit.

#221 Beef Brisket (by JoeFoodie)
Slow cooked, smoky, simply seasoned, and supremely tender.  This beef brisket strikes a balance between luscious fat and toothsome beef.  On the side are gently spiced, seductively sweet maple mashed sweet potatoes.

#220 Cheesecake (by JoeFoodie)
Homemade cheesecake is not easy to prepare.  Quite literally an all day proposition, but at the end of it all the finished product is incredible.  Lighter & creamier than store bought versions with a dense, buttery cookie like crust.
