A simple, totally refreshing condiment.  Fresh tomatoes, onions, jalapenos, cilantro, and a hint of lime juice.  When perfectly fresh, nothing beats pico.

#225 Mexican Pizza (by JoeFoodie)
Shredded rotisserie chicken seasoned with cumin and chili powder, black beans, mozzarella cheese inside 2 fresh cooked tortillas. Topped with homemade salsa & more cheese.  Baked in a 400 degree oven.  Slices of fresh jalapenos finish it off.
Great way to use leftover chicken. The jalapenos add intense spiciness and freshness.

Shred some rotisserie chicken, warm in a pan with EVOO add garlic, diced fresh tomatoes, and baby spinach.  Add cooked penne and cook until spinach is wilted.
I topped mine with fresh cayenne peppers. 
An easy and delicious dinner.  Lots of flavor and freshness.  The tomatoes from the garden really make this dish.
