What’s for Dinner Wednesday?

Long day? It seems like one over here. Working all day and then coming home, taking care of the kids, and making dinner. Now to sit back, relax and eat. Wait..no, I have to blog really fast. Hi everyone!

What’s for dinner?

I’m making this short and sweet today. I mean, c’mon, who’s here for the conversation, right? Show us the food!

I made vegetable lo mein and grilled some marinated salmon. I doubled the batch of lo mein and marinated some of the salmon with a little of the sauce. It was my first time making it as my husband is on a no meats - no sweets fast, and he really liked it. Want the recipe? Here ya go.

What’s for Dinner Wednesday?

I know, I know. It’s sunny, you’re busy, there’s a game coming on, you have to work late, take the kids to practice, or insert whatever here…very soon though, you’re going to want to eat something. What I’m asking you is, do you know what you’re having yet?

What’s for dinner?

I made a taco bar. Pretty easy, and, well, who doesn’t like tacos? (ok, I know there’s a few of you who probably don’t, but…well, that’s why it’s a ‘bar’, you can make what you want. ;)

Easy enough. Make taco meat, and whatever your favorites are. I turned 2 lbs of ground beef into taco meat, then cut up a tomato, a red onion, lettuce and set them on the cutting board, then placed sour cream (or in my case, greek yogurt) shredded cheese, salsa and green onion out next to the cutting board. The teen assembles hard tacos, the younger one gets soft tacos, the husband heats up some queso and makes nachos, and I made a taco salad.

A full head of chopped romaine, red onion, some tomato, salsa, taco meat, spanish rice, a little cheese, greek yogurt, and a few crushed tortilla chips on top. Served with a small margarita on the side. This is one of my favorite meals in the warmer months.

Why two pounds for just a family of four? Why not? There’s plenty now left over for a quick meal later in the week this way. (which is perfect for hungry teenagers when they get home from school, or to pack up to take to work for lunch.) I usually make a lot of food and have “free the fridge Friday”. Visiting Maria’s Comida is always a treat. From the old standby Asian Baby Back Ribs to new dishes like coconut curry tofu, there’s bound to be an enticing item or two on the menu. 
For vegetarians, the Black Bean Tacos are particularly pleasing.  Hearty black beans, briny feta, and tangy slaw work harmoniously inside the corn tortilla.  Drizzle a bit of Maria’s House Made Mango Habanero Salsa on top for bit of heat and sweetness.

What’s for Dinner Wednesday?

I know that April showers are supposed to bring May flowers, but all I’m seeing right now are ugly gray skies and muddy puddles that I want to go jump in. Bring on the sunshine and colors that only Mother Nature can provide for us already! Am I right here? Anyway…

What’s for dinner?

I needed color, I needed flavor, and I needed a touch of heat all rolled into one somewhat healthy meal tonight, so I went out and got some to put on my plate!

Tonight I grilled mango citrus marinated salmon with pineapple mango salsa (with a bit of fresh jalapenos chopped into it) and pineapple fried rice using brown rice.

There wasn’t a real recipe that I used for this. I kind of read a few of them and just cut up a mango and a few pieces of fresh pineapple, red onion, jalapeno and red pepper, and squeezed a lime over all of it and mixed it together.

The marinade was bottled, and the fried rice was kind of put together too. I heated up some oil in my wok, tossed in red onion, red and green bell peppers, and carrots for about a minute, tossed in two eggs, scrambled them for a few minutes, and then the pineapple….added about 3 cups of cooked brown rice, and used a little bit of oyster sauce, salt and pepper.

Opening Day in Detroit!
Opening day at Comerica Park is this Friday, April 8.  We stopped by Coaches Corner in Detroit last week to sample some pre or post game fare.  
Their menu is sports themed with the Coaches Grand Slam burger being the culmination of all wonderful things in a bun. 
1/2 pound burger cooked in zip sauce topped with cheddar, bacon, an onion ring, a queso bite (spicy cheese stick), lettuce, tomato, onion, and pickle.
Coaches will be open at 7 a.m. on Friday for maximum partying before the 3 p.m. game.

Pictured here we have Ziggy’s Famous Cheesesteak - fresh sliced ribeye, grilled onions, diced hot cherry peppers, and provolone.  On the side, Cheez Whiz fries topped with real deal Cheez Whiz.
We like a little heat on our cheesesteaks.  And for those who want truly authentic South Philly style, ask for “wit,” and your cheesesteak will be topped with Cheez Whiz.
